Major Duties

Serves as lead cook over 5 employees assigned to the Galley (2 WG-08 and 3 WG-05 cooks) performing administrative and cooking activities, preparing vegetables and fruits for cooking or raw-use, and in cleaning equipment and work area. Reviews menus, work sheets and recipes, and determines type and quantities of items required for number of persons to be served recipe requirements. Cuts and trims to cooking sizes and weighs or measures portions and ingredients for regular or modified diets in accordance with menus, recipes or other instructions. Oversees cooking process; checks condition of food and turns and bastes meat as required; prepares and cooks sauces, gravies, soups, stews, casserole dishes, hot cereals, pancakes and French toast. Cooks hot breads and may prepare baked goods such as cakes and pastries. Operates in accordance with safety regulations and the mechanical kitchen equipment used in the preparation and service of food.

CREDIT FOR UNPAID OR VOLUNTEER EXPERIENCE: Credit will be given for unpaid experience or volunteer work such as community, cultural, social service, and professional association activities on the same basis as for paid experience. To receive proper credit you must show the actual time such as number of hours a week spent in such activities.

SCREEN OUT ELEMENTS: The ability to do the work of a Cook , XF-7404-08 without more than normal supervision and 2) Work Practices (including keeping things neat, clean, and in order 3) Ability to Interpret Instructions, Specifications, etc. (other than blueprints


4) Technical Practices (theoretical, precise, artistic 5) Ability to Use and Maintain Tools and Equipment 6) Knowledge of Materials


7) Dexterity and Safety. All members of the galley crew must pass a Food Handler's Medical Examination.




WORKING CONDITIONS: The incumbent is subject to uncomfortably warm and noise work area. At


times are exposed to steams, fumes, oils or grease, some splashing of water, cold of refrigerators and heat of stoves and ovens. Is subject to danger of


serious burns and to cuts or other injuries in work area.




PHYSICAL EFFORTS: Work involve some lifting or moving of objects weighing up to 30 to 50 pounds (e.g., utensils or containers of foods); constant standing and walking; and occasional lifting of over 50 pounds (e.g., pans of meats).

Work requires standing, stooping, bending, climbing, crawling, and kneeling for extended periods in uncomfortable positions. Worker may lift and move materials weighing up to 40 pounds and, occasionally heavier items with assistance. Ability to lead or supervise employees engaged in technical work related to this position.
